You also need to download the trial of 64-bit windows server, because that's not in the actionpack too

Mike, I spoke with the Action Pack folks in the US last week about this and they're optimistic about getting 64 bit server in the next release. All is not lost though as the eval version of Exchange 2007 actually comes in X86 flavour aswell as x64 (though will only be available as x64 on release as I'm sure you know) so you can do some testing without X64 server.
